Rice: If done right, cooked not too mushy or too al dente
Cook spaghetti until al dente. Reserve 1/3 cup of the pasta cooking water and combine it with lightly beaten eggs and cheese.
Bring a large pot of lightly salted water to a boil. Add pasta and cook for8 to10 minutes or until al dente; drain and rinse with cold water.
In a large saucepan, bring 6 cups stock to a boil. add orzo ; cook until al dente, 10 minutes. add salt and pepper.
The sauce is placed at the bottom of an empty bowl, unseasoned al dente noodles are put over the sauce and the diner is charged with the task of mixing it all up.
